Fried Rice


I am sure that I have mentioned that I normally purchase fried rice from Trader Joe's but never again will I. For some reason fried rice was something that I was scared to make. I did not know how to make it, so I never bothered trying to figure it out, this changed when my 1 year old started eating solid foods. Fried Rice is a great food for new eaters as it has everything but dairy in one dish. I found a recipe on http://fooddownunder.com/cgi-bin/recipe.cgi?r=25505 and started to play, I made some chicken fried rice and some beef fried rice, and both were a huge hit with the whole family. Here is my recipe modified from the link above:


Basic Fried Rice Recipe


4 cups of cooked rice

1 cup of frozen peas

1/3 cup of chopped carrots

1/2 cup of diced onion

2 tablespoons of butter

2 tablespoons of soy sauce

1 1/2 cups of cooked Chicken, Beef, or Pork


Cook rice following instructions on package. Pour rice into a large bowl to let it cool in the refrigerator. If adding meat to the recipe, cook meat and set aside. Scramble the eggs in a small pan over medium heat, separating the eggs into small pieces while cooking. In a large pan add some butter, and cook onions and carrots until the onions are translucent, set aside with eggs and meat if using. Melt 1 1/2 tablespoons of butter in the same pan that you cooked the onion and carrots over medium/high heat. When butter has completely melted, dump the cold rice in the pan and make sure that it is coated with butter. Add all other ingredients into the pan and add soy sauce. Cook rice for 6-8 minutes over heat, stirring often. Serve.

Perfect Seasonal Side


Rena and I were having a conversation about food, as always, and she mentioned a salad that she had read about that featured peas and asparagus, I thought that sounded great, so armed with no recipe off I went to create a great side dish to feature the local asparagus that I got at Dean and Don's the other day. This is quick and simple and even my five year old liked it.

1 bunch of local asparagus
1/3 cup of frozen peas
2 tablespoons of olive oil
the zest from 1 lemon
salt and pepper to season

Wash asparagus and cut each spear into about 3 pieces. Heat a skillet large enough to fit all of your asparagus on medium high and add oil. When oil is heated add asparagus, lemon zest, salt, and pepper. Cook stirring regularly until asparagus begins to turn a brighter green, about 3 minutes, at this time add the peas and cook until peas are bright green. Serve on the side of fish, chicken, pork, beef, or eat alone. Enjoy...

Something New from TJ's

I am a huge Trader Joe's fan, just in case you have not noticed. I have been shopping there since I was 10 years old, and when I moved to VA, I was very happy to know that there was one just a few miles away. The other day when I stopped in searching for some honey goat cheese, a product that I found out was seasonal :(, I got a taste of something new. Rice Noodle Mac and Cheese. They had added some peas, something that I would have never thought of, but what a great way to get kids to eat their veggies! I had to buy a box the second I tasted it. This is not your Kraft Mac and Cheese. This product has a great cheese flavor, is wheat and gluten free, and I promise you and the kids will both love it. Next time you are at your local TJ's make sure to pick up a box, don't forget the peas.
