Orecchiette with Braised Broccoli Rabe and Sweet Italian Sausage

Last night for dinner I thought that we would try something new. That new thing was broccoli rabe and cooking with anchovies. I have never had the rabe before but figured that I would like it since  I love most leafy greens. This one did not disappoint. I have some issues with canned fish of any kind and I will sometimes use anchovy paste, but touching those little hairy things and watching them cook, I was not so sure about. I decided to give it a try and I reviewed a ton of recipes and came up with this delicious meal. I hope that you will go out of your comfort zone like I did to make this and give the recipe a try. Orecchiette with Braised Broccoli Rabe and Sweet Italian Sausage

1 bunch of Broccoli Rabe, stems trimmed and cut into 1 inch pieces

1 pound orecchiette pasta

3 tablespoons olive oil

1 pound Sweet Italian-style sausage, casings removed (I prefer turkey or chicken sausage for this recipe)

2 garlic cloves, minced

1 onion, minced

3 anchovy fillets, rinsed and patted dry

a Pinch of dried crushed red pepper flakes

1/4 cup grated Parmesan

Cook the sausage, breaking it up into pieces with a spoon, until browned and juices form, about 12 minutes. Set aside in a large bowl and cook the orecchiette according to package directions. In the same pan that you cooked the sausage in add olive oil and heat to medium high. When the pan is hot add in garlic, onions, anchovies, and pepper flakes. Cook until the anchovies break up and the onion and garlic are soft, about 5 minutes. Rinse the Broccoli Rabe and add to the pan. Cook stirring frequently until the broccoli rabe is wilted and tender around 10 minutes, add to the sausage in the bowl. Drain the pasta and add to the bowl with the sausage and broccoli rabe, stir to mix and top with cheese.

My 6 1/2


This is the ultimate sandwich. I have been craving this for so long, but never seem to have fresh mozzarella around the house. This simple sandwich is definitely one that you will crave and enjoy serving to others. Fresh mozzarella, sliced tomatoes, prosciutto, and basil drizzled with olive oil, balsamic vinegar, and Italian herbs, served on a baguette. You can add pesto or roasted red bell peppers, but in my opinion the simpler the better for this one. This is another Morucci's inspired sandwich, once again, i you find yourself in the Bay Area, take the trip to Walnut Creek and enjoy a great lunch.
I am trying to work on my pictures of food, but I now realize why professionals use fake food to get great pictures.

Great Spring Recipe


A friends and I were talking about recipes using vegetables that are in season right now, and she mentioned that Food and Wine magazine had a great pasta recipe. After hearing about it, I knew that I had to try this recipe: http://www.foodandwine.com/recipes/penne-with-asparagus-sage-and-peas. It is a habit of mine to never make a recipe as written, this one was no exception. For this one I did not use sage, I used one of my favorite Italian cheeses, Pecorino Romano, and used mini cheese raviolis instead of penne. I also cut down on the chicken stock, used low fat milk instead of heavy cream, and reduced the amount of cheese, garlic, and butter. I really do not feel that I made the recipe from Food and Wine, however it was definitely my inspiration and deserves credit as such. Give this recipe a try or add your own touch to it. Take the recipes advice and serve with a nice Sauvignon Blanc. While on the website for Food and Wine check out some other great recipes, there were quite a few that I am dying to try. I hope this recipe inspires you to get some asparagus and taste the flavors of spring.
