Breakfast Muffins

One of my favorite things to cook up for breakfast is a breakfast muffin. This is a great brunch food and the possibilities are endless for what you can put in. All you need is a package of  Pillsbury Crescent Rolls and your favorite breakfast items. In my house this is scrambled eggs, bacon, and cheese. Preheat oven to 375 degrees. Take a muffin pan and spray some Pam into the tin. Unroll your dough and place a square in each muffin base so that the largest part of the dough is in the bottom of the tin. Top with some bacon, eggs, and cheese then fold the rest of the dough over the ingredients so that all the filling is covered with dough. Place in the oven for about 18 to 20 minutes and serve. I tend to serve these with my version of these Homefries. Hope that you find your family's favorite breakfast muffin.

Recipe Testing


I get a few magazines each month, Better Homes and Gardens, Country Living, Bon Appetit, and Gourmet. Each has some articles that inspire me one way or the other. This month it was the strawberries in BHG and Bon Appetit. For breakfast I made this recipe from Bon Appetit.
Strawberry Citrus Salad

Ingredients


3 cups of sliced strawberries


2 large navel oranges, supremed


2 tablespoons of golden brown sugar


2 tablespoons of thin sliced fresh mint leaves

To make this recipe right I wanted to learn how to segment an or as I learned supreme. This site gave me enough confidence to give it a try. A Classic


Many people are having money issues in these tough economic times, why not enjoy a classic low cost dish that is great for breakfast or lunch, a fried egg sandwich. I went simple on mine for lunch today and just added cheese, but there are so many different options for a fried egg sandwich. Add bacon, ham, a sausage patty, tomato slices, avocado, the list could go on and on.
